for the pancakes (adapted from greatgrubdelicioustreats.com):

  • 1 cup flour

  • 2 tbs sugar

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/4 tsp baking powder

  • 1 egg

  • 1 cup buttermilk

  • 1/4 cup frozen wild blueberries

  • 1 tsp vegetable oil

  • butter, maple syrup, etc.

  1. in a bowl, whisk flour, sugar, baking soda, salt, and baking powder

  2. in a separate bowl, whisk eggs and buttermilk before adding blueberries

  3. fold in the dry ingredients and gently stir. the batter will be lumpy but thats okay. let batter rest for 5 - 10 minutes

  4. grease a pan on medium heat and add 1/4 cup batter to the pan

  5. flip the pancakes over when the sides are cooked and bubbles have formed

blueberry pancakes for one

for microwave blueberry compote:

because im not in the mood to wash multiple pots and pans also this is all just guesstimate

  • 1/4 cup frozen wild blueberries

  • 1 tbs lemon juice

  • 3 tbs sugar (more or less)

  1. add ingredients to a bowl and microwave for 30 seconds

  2. stir and microwave for 30 seconds again until it becomes a thicker consistency

  3. serve w pancakes
