brown butter chocolate chip cookies
makes 18 cookies
2 sticks (1 cup) unsalted butter, cubed
3 cups ap flour
2 eggs (room temp)
1/2 cup white sugar
3/4 cups brown sugar
2 tsp vanilla
1 tsp baking powder
1 tsp baking soda
1/2 tsp course sea salt + extra for sprinkling
1 cup ish chopping chocolate or chocolate chips (i used 1/2 a block of trader joes pound plus 72% chocolate bar)
place butter in a pot over medium ish heat. stir or twirl(?) the pot to keep it moving. the butter will foam and sizzle and continue cooking for 10 ish minutes until the foam disappears and brown milk solids collect at the bottom
transfer butter to a separate bowl and let cool until solidified but still soft
preheat oven to 365º F (idk this is the temperature that works for my oven)
in a bowl, whisk together flour, baking powder, baking soda, and salt until well combined
in the butter, add white and brown sugar and beat until light and fluffing. mix in eggs and vanilla one at a time until homogenous
add flour in three batches, roughly beating in between each batch, and add in the chocolate in the last third. beat until everything combines into a dough
divide the dough into 18 balls (around 3 - 4 tbs each) and place onto baking sheet covered in parchment paper. sprinkle each ball with a pinch of sea salt. bake for around 15 - 20 minutes or until golden brown
